You can make them ahead of time and freeze (&lt;i&gt;unfilled&lt;/i&gt;) in a ziptop bag.  These bite-sized treats are easier to make than you would think!&lt;br /&gt;&lt;br /&gt;&lt;b&gt;The Pampered Chef ® Profiterole Puffs Recipe&lt;/b&gt;&lt;br /&gt;&lt;br /&gt;Puffs&lt;br /&gt;3/4 cup water &lt;br /&gt;1/4 cup butter or margarine &lt;br /&gt;1/4 teaspoon salt &lt;br /&gt;3/4 cup all-purpose flour &lt;br /&gt;3 eggs, lightly beaten &lt;br /&gt;&lt;br /&gt;Filling and Topping&lt;br /&gt;1 container (8 ounces) frozen whipped topping, thawed &lt;br /&gt;1/2 cup powdered sugar &lt;br /&gt;1/2 teaspoon Double-Strength Vanilla  &lt;br /&gt;2 tablespoons chopped pistachios or almonds &lt;br /&gt;1/4 cup prepared chocolate frosting, melted &lt;br /&gt;&lt;br /&gt;Preheat oven to 375°F. For puffs, in (1.5-qt.) Saucepan, combine water, butter and salt; bring to a boil over high heat. Add flour all at once. Using Classic Scraper, stir mixture vigorously about 1 minute or until mixture leaves sides of pan and forms into a ball. Remove from heat; place dough into Classic Batter Bowl. Vanilla&lt;br /&gt;1/4 cup Honey&lt;br /&gt;1 cup Raisins&lt;br /&gt; &lt;br /&gt;1.Preheat the oven to 350-F degrees.&lt;br /&gt;2.Mix the oats, wheat germ, coconut, seeds, and nuts in a large bowl.&lt;br /&gt;3.Put the oil, vanilla, and honey in a small saucepan, and heat over low to medium heat until it's a little warm, stirring as it heats. Pour over the oatmeal mixture, and stir until all the dry and wet ingredients are blended. &lt;br /&gt;4.Spread out on ungreased baking sheets. Slide them into the oven and set the timer for 45 minutes. When it dings, take a peek. If everything's all toasty, it's time to remove it; otherwise, bake for 5-10 minutes more. (But you can turn the oven off, because it'll stay hot that long, if you leave the door closed.)&lt;br /&gt;5.When the granola is out of the oven and set on a heat-proof surface, sprinkle the raisins over the top and stir a little to mix them in.  Allow everything to cool, and then store it in air-tight containers. Lunchtime planning can provide a great—and healthy—opportunity for kids to do just that. Begin by making a list of nutritious sandwiches and sides for them to choose from each day (or once a week if you like to organize meal planning and grocery shopping in advance). If your children are old enough, you can even enlist their help at the supermarket by asking them to read you the shopping list as well as assist in finding the items and putting them in the cart. &lt;br /&gt;&lt;br /&gt;How do you get your kids more involved in lunch preparation and make it fun? Here are some tips to help:&lt;br /&gt;&lt;br /&gt;•Read recipes through first so there are no surprises along the way. &lt;br /&gt;•Teach your child basic preparation skills such as gathering all the bowls, pans and/or necessary utensils as well as measuring ingredients. &lt;br /&gt;•Cut sandwiches into a variety of shapes with a cookie cutter (if suitable for the recipe). &lt;br /&gt;•When packing lunch, have your youngster help wrap up sandwiches with colorful plastic wrap and seal with a favorite sticker. &lt;br /&gt;•Add a crazy straw and colorful napkin and sneak in a surprise love note for your child.&lt;br /&gt;&lt;br /&gt;Don’t forget to praise your youngster’s efforts and new-found kitchen skills consistently, to encourage more fun in the kitchen. Need to take something to a summer gathering?  The Colossal Chopped Salad is a favorite of mine.  I usually make it as it is below, but sometimes I have extra cooked chicken or veggies that need to be used up.  They fit wonderfully in this lively medley of color and flavor.&lt;br /&gt;&lt;br /&gt;&lt;b&gt;The Pampered Chef ® Colossal Chopped Salad Recipe&lt;/b&gt;&lt;br /&gt;&lt;br /&gt;1 package (16 ounces) uncooked penne pasta &lt;br /&gt;1 head romaine lettuce, thinly sliced &lt;br /&gt;2 cups diced cooked chicken &lt;br /&gt;1/2 cup sliced red onion &lt;br /&gt;1 yellow summer squash or zucchini &lt;br /&gt;2 plum tomatoes &lt;br /&gt;1 large carrot, peeled &lt;br /&gt;1 can (3.25 ounces) pitted ripe olives, drained &lt;br /&gt;1/2 cup (2 ounces) grated fresh Parmesan cheese &lt;br /&gt;1 cup Italian or ranch salad dressing &lt;br /&gt;&lt;br /&gt;Cook pasta according to package directions in (8-qt.) Stockpot; drain and rinse under cold running water using large Colander. Spoon pasta onto Simple Additions® Large Round Bowl.&lt;br /&gt;&lt;br /&gt;Meanwhile, thinly slice lettuce and dice chicken using Chef's Knife. Slice red onion using Ultimate Mandoline fitted with v-shaped blade. Slice yellow squash with Ultimate Mandoline fitted with crinkle blade; cut slices in half using Santoku Knife. Hopefully you will see something new, but maybe your kitchen is already kid-friendly!  Did I miss something?  Let me know and I'll add it to the list!&lt;br /&gt;&lt;br /&gt;TIPS FOR MAKING YOUR KITCHEN "KID-FRIENDLY":&lt;br /&gt;&lt;br /&gt;1.Store matches, lighters, sharp utensils and household cleaners in a cabinet accessible only to adults.&lt;br /&gt;&lt;br /&gt;2.Put child-safety latches on all lower-level cabinets. &lt;br /&gt;&lt;br /&gt;3.Unplug appliances when not in use and keep cords out of reach of children.&lt;br /&gt;&lt;br /&gt;4.Never pour hot liquid near a child and never leave hot drinks within reach.  &lt;br /&gt;&lt;br /&gt;5.Use the back burners of the stove and turn pot handles toward the back.&lt;br /&gt;&lt;br /&gt;6.Watch out for tablecloths - since small children enjoy pulling on the cloth, glasses and plates can come crashing down.&lt;br /&gt;&lt;br /&gt;7.Keep stools and chairs away from counters and stoves.&lt;br /&gt;&lt;br /&gt;8.Be sure to keep alcohol locked away from children.&lt;br /&gt;&lt;br /&gt;9.Many kitchen accidents occur within seconds.  Use a child-safety gate, if possible, in the doorway to keep children out of the kitchen completely when you are in another room. &lt;br /&gt;&lt;br /&gt;COOKING WITH KIDS - LET'S BEGIN!&lt;br /&gt;&lt;br /&gt;1.Before starting any food preparation, review basic hygiene with young cooks.  Have them wash their hands with soap and warm water as long as it takes to sing "happy birthday."  An apron will protect clothing and a Twix-it Clip is perfect to keep long hair away from food.&lt;br /&gt;&lt;br /&gt;2.Help your child identify and assemble all the equipment needed for the recipe.  Teach less-experienced cooks techniques such as measuring and the difference between liquid and dry measures (use the Measure-All Cup). &lt;br /&gt;&lt;br /&gt;3.Show your children how to cut, slice, and chop foods safely.  Introduce children to kid-friendly cutting/slicing tools such as the Egg Slicer Plus, Apple Wedger, Crinkle Cutter, and Food Chopper.&lt;br /&gt;&lt;br /&gt;4.Kids will warm up to breakfast with "Eggs in a Nest."  Kids can use any Cookie Cutter to cut a shape out of the center of a slice of whole wheat bread.  Melt a teaspoon of butter on the 8” Saute Pan or spray with oil with the Kitchen Spritzer.  Place the bread on the griddle and break an egg into the cut-out shape.  Cook until egg is set and bread is golden brown.  Flip the nest over, cook until egg is slightly firm and bread is golden brown, about one minute.&lt;br /&gt;&lt;br /&gt;5.Kids can create fun lunch sandwiches by cutting slices of bread, cheese, and deli meat with any cookie cutter.  Stack cheese and meat slices between bread slices; secure by poking a pretzel stick through the center of each sandwich.&lt;br /&gt;&lt;br /&gt;6.If French fries are the only potato your kids will eat, try "Baked potatoes a la Mode."  Potatoes "baked" in the microwave are quick and easy, and they're a great way to introduce kids to the microwave oven.  Pierce a potato several times with the Hold 'N Slice; microwave on HIGH until tender.  Split potato; top with shredded cheese, salsa, and sour cream.  For "Stuffed Spuds," core the center from a large potato.  Fill with finely chopped broccoli and shredded cheese or seasoned ground meat; wrap in aluminum foil and bake 1 hour or until done.&lt;br /&gt;&lt;br /&gt;7.Let the kids make their own pizzas!  You can prepare dough ahead of time and store the rolled-out rounds in the freezer (stack them between sheets of waxed paper).  Have each child top the dough rounds with his/her favorite toppings (pizza sauce, shredded cheese, chopped veggies, and sliced pepperoni) to make funny faces, clowns, etc.  Place on a flat baking stone and bake according to recipe directions.  If you're pressed for time, refrigerated biscuit dough, bagels, pita bread, or English muffin halves make great crusts.&lt;br /&gt;&lt;br /&gt;8.Next time your kids have a snack attack try these quick fixes:  "wrinkly" carrot or cheese sticks (Crinkle Cutter); melon balls (Core n More); apple and peanut butter wedges (Apple Wedger).  Flavor popcorn with finely grated Parmesan cheese (deluxe Cheese Grater); cinnamon-sugar (Flour/Sugar Shaker); or melted garlic butter (Garlic Press/covered micro-Cooker).&lt;br /&gt;&lt;br /&gt;9.For healthy "warm weather" treats, kids can spoon their favorite flavored yogurt into Ice Shaver Tubs and freeze.  For fast fruit pops, cut wedges of watermelon with the Crinkle Cutter.  Slide a flat wooden stick into the fruit; wrap in plastic wrap and freeze.  For milkshake lovers, try "I-Can-Do-It-Myself-Milkshakes."  Put 2-3 large scoops of vanilla ice cream or Frozen Yogurt into the Quick-Stir Pitcher.  Add chocolate syrup and 1 cup cold milk and plunge until thick and frothy!&lt;br /&gt;&lt;br /&gt;10.Kids love "mini" foods and many of our dessert pizzas such as Taffy Apple Pizza and Banana Split Brownie Pizza can be made into personalized creations. These can be made a few hours ahead without getting soggy.&lt;br /&gt;&lt;br /&gt;&lt;b&gt;The Pampered Chef ® Strawberry Amaretto Pastries Recipe&lt;/b&gt;&lt;br /&gt;&lt;br /&gt;1/2 package (17.3 ounces) frozen puff pastry sheets (1 sheet), thawed &lt;br /&gt;1/2 cup sliced almonds, divided &lt;br /&gt;1 tablespoon  granulated sugar &lt;br /&gt;1 container (8 ounces) sour cream &lt;br /&gt;1/2 cup powdered sugar &lt;br /&gt;1/4 teaspoon almond extract &lt;br /&gt;1 1/2 cups thawed, frozen whipped topping &lt;br /&gt;12 large strawberries, sliced &lt;br /&gt;1 orange &lt;br /&gt;&lt;br /&gt;Preheat oven to 400°F. Unfold pastry dough onto Large Bar Pan. Finely chop half of the almonds using Food Chopper. Combine chopped almonds and sugar in Prep Bowl; sprinkle evenly over surface of dough. Lightly press almond mixture into dough using Small Mix 'N Scraper®.&lt;br /&gt;&lt;br /&gt;Using Pizza Cutter, cut dough lengthwise into three strips; cut strips crosswise into four squares for a total of 12 squares. Using Mini-Serving Spatula, separate squares evenly over surface of bar pan. Bake 16-18 minutes or until puffed and golden brown. Remove from bar pan to Stackable Cooling Rack; cool completely.&lt;br /&gt;&lt;br /&gt;Place remaining almonds in (8-in.) Sauté Pan. Cook over medium-high heat 2-3 minutes or until lightly toasted, stirring occasionally; remove from heat. This will soon become a family and entertaining favorite!&lt;br /&gt;&lt;br /&gt;&lt;b&gt;The Pampered Chef ® Lemon Chicken Pasta Toss Recipe&lt;/b&gt;&lt;br /&gt;&lt;br /&gt;8 ounces uncooked radiatore pasta &lt;br /&gt;1 medium onion, chopped &lt;br /&gt;1 small carrot, peeled &lt;br /&gt;3 garlic cloves, pressed &lt;br /&gt;1 small red bell pepper &lt;br /&gt;2 cups small broccoli florets &lt;br /&gt;1/4 teaspoon salt &lt;br /&gt;2 cups diced, cooked chicken breasts &lt;br /&gt;1 cup prepared Alfredo sauce &lt;br /&gt;1/2 cup hot water &lt;br /&gt;1 lemon, cut in half crosswise &lt;br /&gt;1/4 cup (1 ounce) grated fresh Parmesan cheese &lt;br /&gt;Snipped parsley and coarsely ground black pepper (optional) &lt;br /&gt;&lt;br /&gt;Cook pasta in (4-qt.) Casserole for 2 minutes less than package directions; drain. Meanwhile, chop onion using Food Chopper. Slice carrot using Crinkle Cutter. Use my Product of the Week, the Manual Food Processor, to make this fast, simple and cool Strawberry Ice.&lt;br /&gt;&lt;br /&gt;&lt;b&gt;The Pampered Chef ® Strawberry Ice Recipe&lt;/b&gt;&lt;br /&gt;&lt;br /&gt;2 tbsp (30 mL) sugar &lt;br /&gt;2 tbsp (30 mL) cold water, divided &lt;br /&gt;2 cups (500 mL) frozen unsweetened strawberries &lt;br /&gt;Cinnamon Crunch Chips (optional) &lt;br /&gt;&lt;br /&gt;Place sugar and 1 tbsp (15 mL) of the water in (1-cup/250-mL) Prep Bowl; stir. Microwave on HIGH 20–30 seconds or until sugar is dissolved, stirring once. Add remaining water; stir. Place frozen strawberries in Small Batter Bowl. Microwave on HIGH 30–50 seconds or until strawberries are slightly thawed. &lt;br /&gt;&lt;br /&gt;Add one-third of the strawberries to Manual Food Processor; cover and pump handle until coarsely chopped, scraping down sides as necessary. So here we go with the first PoW!&lt;br /&gt;&lt;br /&gt;The Manual Food Processor is a go-to product for my kitchen and when traveling.  It has a small footprint - about 6" in diameter - and has a 3 cup volume.  I have waited for a while to purchase a food processor because I wanted to have a spot for the processor to live.  And, the $450 price didn't encourage me to invest, either.  So when the Manual Food Processor came out this Spring, I was so excited!  I wouldn't have a huge monster on my counter or taking up cupboard space.  And who really wants to wrestle that out just to shred some green onions?&lt;br /&gt;&lt;br /&gt;I have used this to make salsas (tomato based and tropical), egg salad, blizzards, tapenades and just general food processing! This recipe is also a "New Consultant Recipe" which means it can be made with only the products in the New Consultant Kit.&lt;br /&gt;&lt;b&gt;&lt;br /&gt;Three-Cheese Garden Pizza&lt;/b&gt;&lt;br /&gt;Garden-fresh vegetables and a trio of cheeses make this pizza a winner. You can serve it as an appetizer or a lighter main dish at around $2 per serving!*&lt;br /&gt;&lt;br /&gt;1 pkg (13.8 oz) refrigerated pizza crust&lt;br /&gt;1 tbsp plus 1 tsp vegetable oil, divided&lt;br /&gt;2 garlic cloves, pressed&lt;br /&gt;4 oz cheddar cheese, grated&lt;br /&gt;4 oz mozzarella cheese, grated&lt;br /&gt;1 oz Parmesan cheese, grated&lt;br /&gt;1 tsp Italian seasoning&lt;br /&gt;1 small onion&lt;br /&gt;2 plum tomatoes&lt;br /&gt;1 medium zucchini&lt;br /&gt;1 cup mushrooms&lt;br /&gt;&lt;br /&gt;1. Preheat oven to 400°F. Lightly brush 1 tsp of the oil over Large Bar Pan using Chef’s Silicone Basting Brush. Unroll dough onto bottom of pan, gently stretching and pressing dough to cover bottom. Place remaining oil in (1-cup) Prep Bowl. Press garlic into oil using Garlic Press; brush evenly over dough. Bake crust 7 minutes.&lt;br /&gt;&lt;br /&gt;2. Meanwhile, grate cheddar and mozzarella cheeses using Ultimate Mandoline fitted with grating blade; place in Classic Batter Bowl. Grate Parmesan cheese over batter bowl using Microplane® Adjustable Grater. Add Italian seasoning using Adjustable Measuring Spoon; toss lightly using Small Mix ‘N Scraper® and set aside. Using Ultimate Mandoline, slice onion and tomatoes using v-shaped blade; slice zucchini using crinkle cut blade. Thinly slice mushrooms using Utility Knife.&lt;br /&gt;&lt;br /&gt;3. Remove pan from oven to Stackable Cooling Rack. Sprinkle half of the cheese mixture evenly over crust; layer evenly with onion, zucchini, tomatoes and mushrooms. Sprinkle with remaining cheese mixture. Bake 15–18 minutes or until crust is golden brown; remove from oven to cooling rack. Cut into squares using Pizza Cutter. While the guests taste the recipe we all put together I take some time to talk about why I started as well as why I continue with Pampered Chef after more than 5 years. That's Power Cooking. Also called Once a Month Cooking (OAMC) and is very similar to the stores like Dinners Ready, Make-it-take-it-Meals, etc. These companies have a great idea, but I wouldn't use them. Why? Well, I can do it myself for a lot less; I know the quality of the ingredients that are in the meals; most have you prepare the food in foil containers which I don't like (I prefer zip top bags for ease of storage and no tinny taste); and, I can teach others how to do it so they can do it at home!&lt;br /&gt;&lt;br /&gt;Check out my facebook page on &lt;a href="http://www.facebook.com/pages/Power-Cooking-with-Kate/177954005599336"&gt;Power Cooking&lt;/a&gt; where I will be posting recipes and tips. It's not for everyone, but I do have a great customer base - and even people who host 2-3 shows a year on a regular basis.  &lt;br /&gt;&lt;br /&gt;I am sad today because I received a call from a potential host.  She is 7 months pregnant, was a referral from her Aunt and was going to have a PC Baby Shower.  It is called Stork the Freezer.  Basically, her guests help to put together freezer meals (usually 10-15) for when the baby comes.  Simple meals that are thaw and reheat as well as ones that take a few more ingredients to finish - items that don't freeze well.  Basically, it is Power Cooking plus.  She was so excited to not only have a PC Baby Shower and to have help making the meals, but that she would get free products (January hosts can get an extra $50-100 in free products) to fill her kitchen.  She was making a list of people she wanted to invite and even had a few ideas to add to the party.  I am sad for her, not for the lost party.&lt;br /&gt;&lt;br /&gt;I was supposed to go to her house this morning and go over the host kit, pick out the recipes and set a date.  She called me one hour before the meeting and cancelled the whole show.  She kept saying "sorry for the inconvenience", but there was none.  We hadn't set a date and I hadn't wasted gas or time by going there.  I probed a bit just to find out why she didn't want to have it after all.  She said it wasn't something she wanted to do right now (um, not true), that it was too much work (she wanted to hand deliver the invites, normally I send them and make the reminder calls the night before, I would have even offered to pick up the groceries and have her reimburse me since she would be close to giving birth and has a 1 yr old), and finally settled in on the fact that her mother in law wanted to give her a baby shower.  So, you can only have one baby shower?  You can't let the MIL know that this is an option and to work with me IF she wanted to go that way?  I provide the entertainment, so no stupid "how big do you think the mother's belly is in yarn" games?  And, her guests would be providing a service to her.  The probably would feel like they needed to bring meals (money out of their pockets and a hassle to get the dishes washed and back to their owners) after the baby was born.  I don't get it.&lt;br /&gt;&lt;br /&gt;Basically, she lied to me.  Someone made fun of the idea and she cowered out of it.  That not only sucks that she bended to their ideas, but that they would take this opportunity away from her.  Why do people do it?&lt;br /&gt;&lt;br /&gt;So, here is a list of 10 reasons to have an in-home cooking show:&lt;br /&gt;&lt;br /&gt;10. You’re on a first-name basis with the Domino’s delivery guy.&lt;br /&gt;&lt;br /&gt;9. Your family is tired of eating Hamburger Helper.&lt;br /&gt;&lt;br /&gt;8. It takes two hours to make dinner, two minutes to consume it and two days&lt;br /&gt;    of soaking the pot to clean it.&lt;br /&gt;&lt;br /&gt;7. Your knives have a hard time cutting through butter.&lt;br /&gt;&lt;br /&gt;6. You received a PC gift and you have no idea what to do with it.&lt;br /&gt;&lt;br /&gt;5. Your kitchen tools are older than your car.&lt;br /&gt;&lt;br /&gt;4. Your family thinks that cookies are supposed to be burned on the bottom.&lt;br /&gt;&lt;br /&gt;3. Veggies taste better when cut into cool shapes--just ask a kid!&lt;br /&gt;&lt;br /&gt;2. Samples of quick, easy and delicious recipes (made before your eyes!)&lt;br /&gt;&lt;br /&gt;1. You deserve a fun time out and I provide the entertainment!&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;With the economy not doing so well, and people totally freaking out about it, I provide a reason to get together (learn new recipes that cost around $2 a serving and take less than 30 minutes to prepare), you don't have to spend a lot of money because people are coming for a taste test and not a meal, and it is fun!&lt;br /&gt;&lt;br /&gt;I am angry at the person who caused this potential host to miss out on a fun and useful party.  Everyone eats, its not a fad and its not going to go away. By choosing one recipe each month, all I have to do is wash the dishes and repack.  And, I get better at the recipe as the month goes on so it becomes second nature to me.  I am able to "forget" about the recipe and focus on the monthly specials, recruiting, etc.  Here are the recipes I chose for 2008 (hopefully I can remember each one!):&lt;br /&gt;&lt;br /&gt;January - Truffle Brownie Cups&lt;br /&gt;&lt;br /&gt;February - Smashed Potato Soup and Fluted Microwave Cake&lt;br /&gt;&lt;br /&gt;March - Power Cooking - Ground Beef&lt;br /&gt;&lt;br /&gt;April - Greek Cheese Torta&lt;br /&gt;&lt;br /&gt;May - Strawberries and Cream Trifle&lt;br /&gt;&lt;br /&gt;June - Red, White and Blueberry Trifle&lt;br /&gt;&lt;br /&gt;July - Deluxe Cheeseburger Salad&lt;br /&gt;&lt;br /&gt;August - Express Shows - Salad Chopper Salsa&lt;br /&gt;&lt;br /&gt;September - Creamy One Pot Pasta&lt;br /&gt;&lt;br /&gt;October - Power Cooking - Chicken&lt;br /&gt;&lt;br /&gt;November - Incredible 30 Minute Chicken and Pumpkin Trifle&lt;br /&gt;&lt;br /&gt;December - Bread Bowl Artichoke Dip&lt;br /&gt;&lt;br /&gt;There is a lot of thought that goes into these recipe choices.  I do try to choose recipes that highlight the next month's host special (so the host can get bookings and get the host special again) as well as showing off the current month's guest special to be able to encourage more sales per person.  I do also work with my hosts if they really want something else. Spray wells of &lt;b&gt;Deluxe Mini-Muffin Pan&lt;/b&gt; with nonstick cooking spray with flour. Place 2/3 cup of the chocolate morsels and butter into &lt;b&gt;Classic Batter Bowl&lt;/b&gt;. Microwave on HIGH 40-60 seconds or until smooth, stirring after each 20-second interval. Add sugar and egg to batter bowl; mix until blended using &lt;b&gt;Small Mix ‘N Scraper®&lt;/b&gt;. Add flour; mix just until flour is incorporated. Using two teaspoons, divide batter evenly among wells, filling wells about two-thirds full. Using &lt;b&gt;Mini-Tart Shaper&lt;/b&gt;, gently tap batter to create level tops. Bake 10-12 minutes or until edges are set. (Do not overbake.)&lt;/li&gt;&lt;br /&gt;&lt;li&gt; Remove pan from oven to &lt;b&gt;Stackable Cooling Rack&lt;/b&gt;; cool 2 minutes. Press tops of brownies with Mini-Tart Shaper to make indentations. Cool in pan 3 minutes. Carefully remove brownies from pan. Trim corner of bag using &lt;b&gt;Utility Knife&lt;/b&gt; to allow ganache to flow through. Pipe ganache evenly into brownie cups. Coarsely chop using Salad Chopper.  Add  salt and pepper to taste; chop until vegetables are uniform in size.  Zest lime into mixture using Microplane Grater, squeeze lime over salsa using Citrus Press; stir.&lt;br /&gt;&lt;br /&gt;At a show I put all the ingredients in the bowl and pass around with the Salad Choppers.  While the guests are chopping away, we make the Triple Citrus Mojitos.  Whomever wants rum in theirs gets rum in their glass first. Spaghetti Sauce and Spaghetti - you never know when you need to make a homey dinner fast!&lt;br /&gt;&lt;br /&gt;9. Flour, sugar, salt, baking powder, baking soda - the basics of baking.&lt;br /&gt;&lt;br /&gt;8. Beans - dry (if you know what to do with them) and canned.&lt;br /&gt;&lt;br /&gt;7. Evaporated Milk.  This may seem weird, but in a pinch, you can water it down and use it as milk in hot chocolate or even cereal.  I like this better than powdered milk because it can still be used in baking.&lt;br /&gt;&lt;br /&gt;6. A cookbook you trust.  Whether it is something fast, something easy, or something you are used to, having a cookbook you trust will make it easy to whip up something or even ask someone to make something you know you will like.&lt;br /&gt;&lt;br /&gt;5. Oils.  I like different oils for different jobs, but you have to make sure you will use them within 3-6 months and that they can be stored in a dark and cool place.  Peanut oil has a great high smoke point, olive oil for flavor and health, vegetable oil for baking.&lt;br /&gt;&lt;br /&gt;4. Onions and potatoes.  You can make so much with just onions and potatoes: hash browns, soup, mashed potatoes, french fries and onion rings (okay, a bit more skill is needed for these), etc.&lt;br /&gt;&lt;br /&gt;3. Broth - chicken, vegetable, beef.  I have all three for different reasons.  I use beef broth the least because we tend to eat more chicken.  I like having it in the boxes because I can sometimes taste the can.&lt;br /&gt;&lt;br /&gt;2. Rice.  Cheezy rice, need I say more?  Okay, I will.  Rice + cheese = yummy.  I do also suggest you have a rice cooker.  It may seem lazy, but I can't tell you how many times I have burnt rice.  Ugh, the smell!&lt;br /&gt;&lt;br /&gt;1. Canned meat/fish - sounds weird, but it isn't.  We are all familiar with tuna.  I prefer tuna from a can.  I also like to have chicken on hand.  Husband likes sardines and such, so I usually have something like that for him.  You can get other seafood as well as turkey in cans.  And, corned beef in a can is great for hash! &lt;br /&gt;&lt;br /&gt;These may not be staples for you and your family, but it is important to have them.  What happens if you have an extra bill and can't go grocery shopping this week? My name is Chef Kate.  There, enough?  I'm not sure how much personal information I should put here, so it might take a little while to get to know me.&lt;br /&gt;&lt;br /&gt;I live in Boise, ID and have for almost 10 years.  The weather is awesome (just enough snow so it stays pretty and you don't get sick of it) and I love having four distinct seasons.&lt;br /&gt;&lt;br /&gt;I grew up in Houston, TX and lived in the same house from age 3-18.  My parents moved when I was 27, so it was a pretty stable household.&lt;br /&gt;&lt;br /&gt;I love animals and have one cat right now.  His name is Cat.  We did have two cats until we had to put Kitten down on October 3, 2008.  I am still raw from it because he was only 7 and he was my first cat.  Cat is 10 and really belongs to Husband.  He only likes me because I am warm and feed him.  Okay, he does like me a bit more than that, but he likes Husband more.&lt;br /&gt;&lt;br /&gt;We have been married for 10 years.  We met online back in 1996 in a chat room on Valentine's Day.  A bit cliche, no?  We got engaged that summer and married in 1998.  Not my idea...another idea for a post later.&lt;br /&gt;&lt;br /&gt;We don't have kids, and I know that is something I want to blog about soon.&lt;br /&gt;&lt;br /&gt;I am a consultant for a company that sells high quality kitchen tools.  They really like to Pamper people who want to be Chefs.  Unfortunately we are not supposed to name the company.  They like to control the brand, which does make sense to me.  But, it does make it hard to blog about. Basically, that's a funny way of saying I left a pot on to boil and let it boil dry.  It is a great way to ruin your pots and get a funky smell in your house.  I totally sucked at cooking.  I thought homemade tacos consisted of a pound of hamburger meat in a skillet - no salt/pepper, onions or seasonings of any sort.  I hated homemade tacos...until I met Husband back in 1996.  Of course, it took a while before I stopped burning water and started making yummy food.&lt;br /&gt;&lt;br /&gt;I do have to say, I'm not the best writer.  I kind of write the way I talk, but I do try to go back and edit and make sure that what I say will make sense to people other than me.
